With all that rain and freezing temperatures this winter, I don’t know about you, but we are SO ready for SPRING! With St. Patricks Day this weekend and the sun shining again we thought we’d get a jump start on spring and share a really delicious, fresh recipe, perfect for enjoying on a lovely spring day. Preserved Lemon & Lavender Fancy Toast
2 SLICES of WHOLE GRAIN BREAD TOASTED
1 HANDFUL ARUGULA WASHED AND DRIED
1 TBLS OLIVE OIL
1/2 TBLS LAVENDER BALSAMIC
(or substitute standard balsamic)
1 TBLS PRESERVED LEMON, RINSED and DICED
1/2 TSP CULINARY LAVENDER
SALT and PEPPER to TASTE
Mash avocado and spread half on each piece of toast. Toss arugula with olive oil, lavender balsamic, and preserved lemon. top avocado toast with arugula mixture, salt+pepper. Garnish with dried or fresh culinary lavender if you have it. Serves 1
Feel free to get creative with this recipe if you don’t have all the ingredients. You can substitute the preserved lemons with lemon zest. You can also substitute regular balsamic for the lavender balsamic and leave out the culinary lavender if you don’t have it.
